Creole pastries: a classic of the festivities

 

Argentine cuisine has its classic dishes that are greatly enjoyed, especially at the Fiestas Patrias.

One of the most tardicional is Creole cupcakes, so we share an easy recipe to be able to make at home.

Ingredients for two dozen cupcakes

For the dough

  • 500g flour 0000
  • 100g butter
  • 250 cc water
  • 1 pinch salt
  • 1 can lemon juice

For Hojaldrar

  • Butter or margarine c/n
  • Corn starch c/n

filling

  • 125g quince
  • 125g sweet potato

preparation

  1. Sand the puff pastry ingredients and join it together. Let her rest.
  2. Stretch the dough along finely, forming a rectangle.
  3. Once the dough is stretched, spread it with soft margarine.
  4. Sprinkle it with corn starch as well.
  5. Roll the dough and crush the roll with your hand to go down to rectangle. Let rest and stretch again finely.
  6. Re-spread with margarine and sprinkle with corn starch. Re-roll and stretch well finely.
  7. Cut into rectangles 8 to 10 cm sideways.
  8. Assemble the cupcake and fill with quince or sweet potato. In each square of dough, place a cube of the filling. Close with another dough, tighten the folds at each end and fry.
  9. Once golden, remove from the oil and put on absorbent paper.
  10. Enjoy as a family.
